Hi! I got this I think about 2 weeks ago, maybe 3. The first week of this starter it was a little slow, but we kept at it. By the second week, it’s been a rock star!!! It’s always super active and I can use almost all of it and then fill the jar back up with warm water and flour, and it’s ready to use again by the next day. It’s had a short stay in the fridge and woke back up quickly, has a nice mild sour taste, and with the stretch and fold method and a mild heat source of 100* F or so, and your bread is ready faster. Great for beginners, or just want a mild sourdough, or to try a different yeast.
